  Hyssop plant, the scientific name of which is Hyssopus Officinalis, is a shrub whose height reaches 60 cm. Its leaves are small, linear, pointed and green. Its flowers are blue and sometimes white, which appear at the end of the stem. The root of hyssop is straight and has many branches. It has a square, straight stem. The lower part (foot of the stem) is wooden and brown in color and has many branches, but the upper part is soft and green in color. The leaves are smooth, toothless, narrow, elongated and more or less spear-shaped and its color is light green. Hyssop is one of the most important medicinal and spice plants. The herbal infusion of this plant is used to treat diseases related to the respiratory system such as cough, whooping cough, bronchitis and asthma. The effective ingredients of this plant increase blood pressure, digestion and also reduce swelling. Although hyssop has a bitter taste, it is used as a food flavoring and also in the preparation of sauces.
